Delicata Squash

Fall.  All the feels.  I love it! I love the abundance of end of summer vegetables and am ready for more hearty, comforting meals. For years I would see people on socials raving about the pure amazingness of Delicata Squash.  I didn’t get it. Squash is a squash. What’s so special about this one?  

I am a sucker for all things new, so, of course, I tried it.  I roasted it with salt and pepper. Meh. Nothing special. My suspicion was confirmed.  It wasn’t anything special.

For the past couple of weeks, I was again seeing everyone on socials raving about this weird vegetable.  Really?!?!?!? What am I missing? I have serious FOMO so when I was at the supermarket I bought another one.  

I found a few different recipes that I used for inspiration then I created my own.  

Delicata Squash is amazing.  I get it now. First of all, you don’t have to peel it!  The skin is so tender that you can just slice and roast it.  Secondly, the texture is almost creamy. And finally it is really versatile!  You can stuff it with anything if you slice it in half and scoop out the seeds.  I can’t wait to try out a variety of ways to prepare this delicious squash! I’m a total convert.  

I love the recipe that I came up with.  This would be a great side dish for a quick weeknight meal and looks fancy enough that you could easily use it as a side dish at Thanksgiving or for a special fall meal.
