If you are trying to eat less processed foods, doing a Whole30, Paleo, Low-Carb or Ketogenic Diet you know that it can be tricky to find a portable, fast and easy snack that is healthy and nutrient-dense.
A couple of years ago, when I was doing a round of Whole30, everyone kept telling me to make hard-boiled eggs. I heard over and over and over again that they are a game-changer. Now. I can cook. I was raised on a farm and started cooking when I was really little. I helped make lunches, dinners, and suppers my for my hard-working dad, brother, uncles, and cousins. All very hungry farmers! So. Even though I was literally raised in a farm kitchen I hated to admit it. I could not boil an egg to save my life.
Well. Actually. I could boil eggs. But they turned out rubbery, or under-cooked, or over-cooked. The level of how poorly cooked they were was really only revealed if you could actually get the peel off. Which NEVER happened.
So. I just didn’t make them! Nope. Never. Ridiculous, right?!?! Yes.
But. Then. One day. About two years ago. I bought an Instant Pot. The heavens opened. Angels sang. I am not exaggerating. Well. Maybe I am exaggerating a little bit. But. The Instant Pot was a game-changer for me!
People always ask me “Do I really need an Instant Pot?” No. You don’t. But I couldn’t cook a hard-boiled egg and now I make them every week. Today I made two batches. One and a half dozen hard-boiled eggs.
The peels fall off. The yolks are cooked perfectly. Every. Single. Time. I feel like a professional chef every time I make them!
